Foods in Aviandria–Fermented Pickles
I have always been fascinated with food in Aviandria. I like to find foods that would be similar to what they would have in Aviandria and try to make them to see what they are like. Aviandria isn’t our world, so that means it doesn’t have to follow our world’s timelines and old/new world food histories, but how people prepare and store food in Aviandria probably is similar to how it has been done throughout our history.
Before they could refrigerate or easily import foods one challenge for people was how to preserve food for times when it wasn’t easy to grow or find, like in the middle of winter. One of the earliest, and most widespread solutions was fermenting foods in brine. Some of the most well-known examples of this are sauerkraut and kimchee, though there are many other things you can do this with. This is also a solution used in Aviandria. They would cover vegetables in brine and let them ferment to store them through the winter until they could find fresh foods. The brine in fermented pickles keeps the harmful bacteria that would make you sick from growing, but it allows the beneficial probiotic bacteria to grow, making this preservation method one of the healthiest. It can also help some of the best nutrients from the vegetables more available to your body.
I recently decided to try this by making sauerkraut and cucumber dill pickles. It has been an interesting experiment, to say the least. It takes weeks to ferment the sauerkraut, and I only started the cucumbers a few days ago, so I haven’t really gotten a chance to try either yet, but it is about ready. I’m hoping I did it right and it will be good. I guess will see when I get to try some. Now I just need some good hot dogs or bratwurst so I can give it a go.
Have you ever tried this method of preserving food? If so, what did you think?
